ST. LOUIS – Katie Lee, owner of St. Louis-based Katie’s Pizza and Pasta in Rock Hill, Missouri, is defying odds as she enters the intensely competitive frozen pizza aisle in Target stores nationwide.

In a world of processed, automated foods, Lee and her team of award-winning chefs are paving the way for the future of frozen pizza by embracing modern authentic Italian cuisine and creating each pizza by hand.

Before her groundbreaking success in frozen pizza, Lee was a high school dropout and experienced homelessness.

“When I was homeless, everything I owned would have to fit into one of Target’s shopping bags; now I’ve made it to their shelves with Katie’s pizzas,” said Lee, when reflecting on just how far she’s come.

Lee has been shattering expectations for restaurant-quality pizza at home through steadily gaining traction by partnering with regional grocery outlets and an online delivery service.

She credits her success to the COVID-19 pandemic. The fear of closing her restaurants inspired her to create a line of frozen pizzas based on her popular restaurant pizza offerings.

In just five years, Lee and her team meticulously scaled production while staying true to their commitment to fresh, quality ingredients and artisan, handmade techniques.
